So, because this is new to me I thought I would share some of the things I have been cooking lately. Here are some things I have made over the past few days...
Inside out Chicken Pot Pies
You will need:
1 tube of refrigerated biscuits
1 cans cream of chicken soup
1 cup frozen peas and carrots mix
2 large chicken breasts, cubed and cooked
1-2 Potatoes, diced and boiled
Seasonings to taste
1. Preheat oven to 375 degrees.
2. Flatten each biscuit between the palms of your hand. Press one biscuit into each cup of a muffin or cupcake pan. Form into a cup.
3. Mix all other ingredients.
4. Spoon mixture into muffin cups.
5. Bake for 20-25 minutes. Let cool slightly before removing from pan.
**These were amazing. We are practicing portion control so this worked out super for us. You can use this same recipe for other "Cups" such as spaghetti (marinara, ground beef, and cheese), pizza (tomato sauce and your favorite topping), or good ole' ham and cheese.
Homemade BBQ Sauce
You will need:
1 cup balsamic vinegar
1 1/4 cup ketchup
1/2 cup brown sugar
1 Tablespoon Worcester sauce
1 Tablespoon Mustard (I have used yellow and Dijon)
1. Mix together in a saucepan. Let simmer and reduce for about 30 minutes.
**Yummies! Also, you can add some honey for a perfectly sweet rib sauce
